Reh mit Mohnspätzle und weihnachtlichem Apfelrotkohl

Roasted venison with apple-red cabbage and homemade poppy "Spaetzle"

Vom Sprachen- und Kulturenblog des Sprachportales"bab.la" wurde ich gefragt ob ich beim internationalen Rezeptekalender mitwirken möchte um das Land Deutschland zu vertreten (am 17. Dezember). Sehr gerne will ich das tun, denn Küchenkultur ist bei mir seit jeher international und es gilt doch die Leckereien in die ganze Welt hinaus zu tragen. Möge es euch, wo immer auf dieser Welt, munden. The language and Culture Blog bab.la asked me if I am interested in participating in an international receipe calendar (have a look at 17th of december). For sure I will show you a traditional meal and receipe from Germany. Cooking culture is very international for me and I really like to send my ideas an receipes everywhere in the world. I hope you will like it. Enjoy my meal and have a wonderful christmas time.

Zutaten/ Ingredients:
1 1/2 kg Rehbraten (Schulter, Rücken oder Keulen) mit Knochen/ Shoulder, leg or saddle of venison incl. bones
1 l Rotwein/ red wine
2 Zwiebeln/ onions
2 Karotten/ carrots
1 kleines Stück Sellerie/ 1 little piece of celeriac
1 Esslöffel Wachholderbeeren/ 1 table spoon juniper berries
2 Stück Lorbeerblätter/ 2 pcs bay leaves
neutrales Öl zum Anbraten/ rice bran oil for roasting
1 Teelöffel Salz/ 1 tsp Salt
Pfeffer/ some black pepper
3/4 Liter Brühe (am besten mit selbst gemachten Suppengrün)/ 3/4 litre stock
1/2 TL Zimt/ half tsp of Cinnamon
1/2 Teelöffel Nelkenpulver/ 1/2 tsp of cloves
Schale einer Bio-Orange/ zest of one organic Orange
2 Esslöffel Sahne/ 2  tbsp of cream
1 Esslöffel Mehl und 2 TL Butter für eine leichte Einbrenne schmelzen lassen und mit ca. 1/2 Liter Brühe aufgießen/ Use 1 tsp flour and 2 tsp lard or butter to prepare a light-brown roux

Zubereitung/ Preparation:
  1. Das Rehfleisch legt ihr am besten 3 Tage vorher bereits in Beize ein. Diese wird wie folgt hergestellt: Karotten, Sellerie und Zwiebel werden in grobe Stücke geschnitten. Nun legt ihr das Rehfleisch in eine Schüssel mit Deckel, gebt das klein geschnittene Gemüse dazu, den Rotwein, das Nelkenpulver und die Wachholderbeeren. Die Schüssel stellt ihr in den Kühlschrank. Jeden Tag einmal wendet ihr das Fleisch in der Beize. Put the meat in a Marinate out of wine, and the sliced carrots, celeriac, onions, juniper berries and cloves. Put it in the fridge with a lid and turn the meat once a day. 
  2. Nach drei Tagen nehmt ihr das Fleisch aus der Beize, trocken tupfen und mit Salz und Pfeffer rundum würzen. Wer Bratenstücke verwendet, kann das Fleisch mit Kochfaden zusammenbinden, dann bleibt es kompakt und fällt nicht auseinander. After three days take the meat out of the marinate, dry it and season it with salt and pepper. Sometimes it is neccessary to bound the meat before roasting.
  3. In Öl wird das Fleisch und die Knochen nun braun angebraten. Zum Schluß wird das Gemüse mit allen Gewürzen auch noch mit angebraten (die Orangenschale kommt erst später dazu) und etwas von der Brühe mit eingeköchelt. Alles setzt ihr nun in einen Bräter und gebt es für 30 Minuten bei 200° C mit verschlossenem Deckel in den Ofen. Dann dreht ihr den Ofen auf 60° C und belasst das Reh weitere 2 bis 2,5 Std. Stunden im Ofen. Wer sich nicht sicher ist, arbeitet lieber mit Fleischthermometer. Im Innernen sollen 80° Grad sein, so dass es schön rosafarben auf den Tisch kommt. Brown meat (and bones) in oil. At least add the vegetables with all spices (but not the orange zest). Add a little bit of the marinate and let it cook for another 5 Minutes. Now put the meat and vegetables in a roaster for 30 minutes at 200 °C with a lid on. After the 30 minutes you reduce the heat to 60°C for another 2-2 1/2 hours. Better use a meat thermostat to get a nice coloured pink meat. 
  4. Nun wird das Fleisch in Alufolie gewickelt damit es nicht auskühlt. In der Zwischenzeit passiert ihr das Gemüse durch die flotte Lotte. Mit Butter und Mehl könnt ihr entweder eine leichte Einbrenne herstellen oder ihr nehmt etwas Speisestärke damit die Sauce eindickt. Etwas Schale der Bio-Zitrone zugeben, das Pektin darin sorgt auch noch etwas für eine sämige Sauce. Zur Abrundung einen Schuß Sahne zugeben. Nochmals abschmecken, ggf. noch etwas nachsalzen. Put the meat in aluminum foil to keep it warm. Pass the vegetable. Heat Butter an add flour to get a nice light-brown roux for the sauce. Add the organic orange zests and the sauce with the passed vegetables.
  5. Das Fleisch wird nun in feine Scheiben geschnitten und mit der Sauce gereicht. Cut thin slices of the meat and pour the sauce over the meat. 
Apfelrotkohl:
1/2 Kopf Rotkohl/ half of a red cabbage
1/2 Liter Rotwein/ half a litre of red wine
150 ml Preiselbeermarmelade/ Cranberry jam
Prise Zimt/ pinch of cinnamon
Prise Kardamom/ pinch of cardamom
Prise Nelkenpulver/ pinch of cloves
1 klein geschnittenen Apfel / 1 sliced apple
1 Lorbeerblatt/ 1 bay leave

  1. Während das Reh im Ofen schmort oder ruhig auch schon 1-2 Tage zuvor, könnt ihr das Apfelrotkraut einkochen. Hierfür viertelt ihr das Rotkraut und raspelt es dann mit der Küchenmaschine (oder mit dem Hobel) auf feinster Stufe. During the venison is simmering in the oven (can be 1-2 days before) the red cabbage can be cooked. Quarter the cabbagee and slice it with a grater or in the food processor finly..
  2. Nun bratet ihr das Kraut mit allen Gewürzen in Butterschmalz oder Butter an und löscht es mit dem Rotwein ab. Cook the cabbage with all spices in butter and add the red wine.
  3. Das Kraut lasst ihr 25-30 Minuten köcheln. Zum Schluß hebt ihr die Marmelade und ggf. noch etwas Zucker darunter. Let the cabbage simmer for 25-30 minutes. At least add the jam and a bit of sugar if you like. 
Mohnspätzle:
400 g Mehl/ 2 cups flour
4 Eier/ eggs
200 ml warmes Wasser/ 3/4 cup warm water
50 g Mohn/ poppy 
1 Teelöffel Salz/ 1 tsp of salt
2 Teelöffel Butter/ 2 tea spoons of butter

  1. Alle Zutaten, bis auf die Butter, in eine Rührschüssel geben. Das Wasser nach und nach zugeben. Der Spätzleteig wird solange geschlagen/gerührt, bis er Blasen wirft. Er sollte zäh vom Löffel gehen, dann hat er die richtige Konstistenz um in den Spätzledrücker oder auf das Schabebrett zu kommen. Combine all ingredients and mix it well until air blisters form and until the dough ceases to cling to the spoon during testing, by holding spoon up in the air. 
  2. Die Spätzle werden direkt in kochendes, gesalzenes Wasser geschabt/gedrückt. Sie sind fertig wenn sie an der Oberfläche schwimmen. Danach werden sie in kaltem Wasser "abgeschreckt".   Traditionally we use a wooden cutting board which we dip in cold water, spread some noodle dough on board and scrape with a knife thin sprips into rapidly boiling salted water. As soon as the "Spaetzle" rise to surface, remove with slotted spoon, rinse, shortly in hot water and place in colander to drain. Instead of scraping ("schaben") by hand, you may press dough through a "Spaetzleschwob" (a Special Swabian noodle-press) which can be purchase in a household goods store.  
  3. Die Spätzle gut abtropfen lassen und vor dem Verzehr kurz in Butter schwenken. Strain the water off and put it with the butter in a pan for two munutes until they are warm.
Zum Rehbraten habe ich noch selbst gemachte Preiselbeeren gereicht, die ich bereits eine Woche zuvor mit Zucker, Zimt, Nelkenpulver und Kardamom eingekocht habe.
We had homemade cranberries to the venison which I cooked one week before with sugar, cinnamon, cloves and cardamom.
